Warm Farro and Cheesy Veggie Salad

  • Water Sautéed Asparagus cut into small pieces

  • ½ Red Pepper chopped

  • 2 Green Onions chopped

  • 1 cup Fresh Greens chopped

  • I – 2 cloves Fresh Garlic minced or finely sliced

  • ½ squeezed lemon to taste

  • 1 cup cooked Farro or other grain

  • Nutritional Yeast- 2 tablespoons to taste

  • Salt and Pepper

  • Optional – olive oil, any nuts and seeds


  • In a medium saucepan place your farro, red pepper, cooked asparagus, greens onions, cooked farro, and a touch of water so it doesn’t stick to the pan.
  • Add the lemon juice, greens, and garlic, and cover the pan for 1 minute until the greens wilt.
  • Take off heat and toss with salt and pepper and nutritional yeast to taste and a touch of olive oil if desired. Top with any nuts and seeds.
