Simple Mexican Salsa Salad

  • ½ small red onion chopped

  • 1 bunch cilantro chopped

  • 12 cherry tomatoes cut in quarters

  • Juice 1 small lemon to taste

  • ½ to one teaspoon cumin

  • ½ teaspoon chili powder

  • Salt and pepper to taste

  • Optional- one jalapeño finely chopped without seeds and white pith

  • Touch of olive oil or ½ an avocado cut in small cubes added at the end


  • Mix all ingredients except avocado in a bowl.
  • Serve over a leafy green salad, or as a side salad, top with avocado.
  • Also serve in tacos or tortillas over beans and rice… many options here!
