Pickled Ginger

Enjoy this recipe with vegan sushi!


  • 1 small glass jar for ginger

  • About a 5-inch long piece of fresh organic ginger peeled a bit and thinly sliced, enough to fill the jar

  • Rice Vinegar to cover the sliced ginger

  • ¼ cup or more date sugar to taste


  • Fill the jar ½ full with rice vinegar and add ½ of the date sugar and stir until the vinegar melts the sugar. Taste and see if there is enough sweetness. Adjust as needed.
  • Add the ginger and ores down into the liquid. Top off with more vinegar until all the ginger is covered. Add more of the date sugar, put on the lid, and shake the jar.
  • When the sugar is melted in, taste again and adjust the sweetness. Refrigerate until ready to use!
