Hummus and Salsa Appetizer

Ingredients

  • 8 oz traditional hummus

  • 3 - 4 oz chunky mild salsa

  • ½ red pepper chopped small

  • ¼ English cucumber chopped small

  • 2 spring onions sliced small

  • ¼ cup Kalamata olives cut in small circles

  • ¼ cup chopped cilantro

  • ½ cup crumbled feta or shredded raw goat cheddar cheese

  • 10 - 12 baby lettuce leaves

Directions

  • Mix hummus and salsa together. If the salsa has a lot of liquid, strain it a bit otherwise it will be too runny. Chill.
  • On top of each leaf of lettuce place a spoonful of hummus/salsa mixture. Then layer up the other ingredients and either eat right away as a little lettuce wrap or serve as a dip with the chopped ingredients sprinkled on top and serve with crackers or cut up veggies for dipping or plate as an appetizer with the lettuce leaf on the plate topped with the hummus/ salsa and then the other chopped ingredients on top and eat with a fork and knife. Any which way, it tastes sooo good!
  • Serve with a large salad and lemon vinaigrette. These can also be eaten without baking. Enjoy!!!
