Simple Mexican Salsa Salad
1/2 small red onion chopped
1 bunch cilantro chopped
12 cherry tomatoes cut in quarters
Juice of 1 small lemon to taste
1/2 to one teaspoon cumin
1/2 teaspoon chili powder
Salt and pepper to taste
Optional- one jalapeño finely chopped without seeds and white pith
Touch of olive oil or 1/2 an avocado cut in small cubes added at the end of top.
Mix all ingredients except avocado in a bowl. Serve over a leafy green salad, or as a side salad, top with avocado. Also serve in tacos or tortillas over beans and rice… many options here!
