Simple Mexican Salsa Salad
½ small red onion chopped
1 bunch cilantro chopped
12 cherry tomatoes cut in quarters
Juice 1 small lemon to taste
½ to one teaspoon cumin
½ teaspoon chili powder
Salt and pepper to taste
Optional- one jalapeño finely chopped without seeds and white pith
Touch of olive oil or ½ an avocado cut in small cubes added at the end
- Mix all ingredients except avocado in a bowl.
- Serve over a leafy green salad, or as a side salad, top with avocado.
- Also serve in tacos or tortillas over beans and rice… many options here!
