Asian Salad on Nori

Ingredients

  • 3 green onions cut in circles

  • ½ red pepper chopped

  • ½ - 1 carrot shredded

  • 6 asparagus spears cut into pieces

  • 2 celery sticks chopped

  • ½ large bunch parsley chopped

  • Sheets of Nori paper

  • Dressing
  • 2 - 3 heaping tablespoons mellow white miso paste

  • 2 - 3 heaping tablespoons tahini

  • 1 tablespoon raw honey

  • 2 cloves garlic finely minced

  • 2 - 3 teaspoons finely chopped pickled ginger

  • ¼ cup rice vinegar

Directions

  • Blend with a fork until smooth except for the tiny bits of garlic and ginger.
  • Spoon into a bowl ½ to 1 cup of salad and mix in enough dressing until moist enough for your liking.
  • Put the mixture in Nori paper and fold up the bottom and the two sides and then fold down the top and eat. Otherwise, spread the mixture on top of Nori across the whole sheet of Nori.
  • Eat with a fork and knife or cut up Nori and put right into the salad and mix it all up with enough dressing so it all holds together a bit and eat like a salad.
