Warm Farro & “Cheesy” Veggie Salad

Ingredients

Water Sautéed Asparagus cut in small pieces

1/2 Red Pepper chopped

2 Green Onions chopped

1 cup Fresh Greens chopped

I to 2 cloves Fresh Garlic minced or finely sliced

1/2 squeezed lemon to taste

1 cup cooked Farro or other grain

Nutritional Yeast- 2 tablespoons to taste

Salt and Pepper

Optional – olive oil, any nuts and seeds

Instructions

  1. In a medium saucepan place your farro, red pepper, cooked asparagus, greens onions, cooked farro, and a touch of water so it doesn’t stick to the pan.
  2. Add the lemon juice, greens, garlic and cover the pan for 1 minute until greens wilt.
  3. Take off heat and toss with salt and pepper and nutritional yeast to taste and a touch of olive oil if desired. Top with any nuts and seeds.
